How exacally does npc editing work?

I imagine the simplist way for people in hammer would be to make new propertys for each npc, but that's probably one of the hardest ways for you guys to implament it. So how's it done? Please don't tell me it's done with external text files like a mapadd.
(I mean things like editting their model, their attack and health, ect.)

hmmm, idk what you mean.
NPC editing? Other then in hammer?
Outside of hammer I would say you use mapadd scripts yes, but if you mean health, name, model thats all in hammer under the entity properties.
Sounds require sound overwrite scripts or sound additions which are the same thing.
Ill write some tutorials on how to use the different customization features of the mod.

So if we want a guy to have like 200 health, we just add it in an npc property?

Good, because I just hate things where you end up having to make external files or seperate entities just to make my npc stronger.

Yeah, all NPCs in hammer have health, name, and model fields (and for a few npcs, custom gib model fields). But any of those can also be changed post-compile though a text file if you don't want to use entspy or recompile the map.
